NOTE: You can halve this recipe and bake it in an 8 x 8-inch pan. Start checking it for doneness after 40 minutes, but it will likely take closer to 50 minutes to bake.


INGREDIENTS

For the streusel topping:

  • 1 cup (180g) brown sugar, packed
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • Pinch kosher salt
  • 1/2 cup (113g) unsalted butter, softened

For the cinnamon layer:

  • 1/4 cup (50g) sugar
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon

For the cake batter:

  • 3 cups (375g) all-purpose flour
  • 2 1/4 cups (450g) sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon kosher salt
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (230g) sour cream
  • 1/4 cup whole milk
  • 4 large eggs
  • 1 tablespoon vanilla extract


INSTRUCTIONS:

  1. Preheat the oven to 350º F and butter or spray a 9 x 13 pan.
  2. Make the streusel layer: In a small bowl, combine the flour, brown sugar, cinnamon, and salt. Use a fork to mash the butter into the mixture until completely combined and crumbly. Set aside. 
  3. Make the cinnamon layer: In another small bowl, combine the sugar, flour, and cinnamon. Set side, as well. 
  4. Begin making the batter: In the bowl of your mixer, add the flour, sugar, baking powder, baking soda, and kosher salt. Using the paddle attachment for your stand mixer, stir on low to combine.
  5. Add the softened butter and beat on medium-low speed for 2 to 3 minutes, or until all of the butter is mixed in, and the mixture resembles moist sand. Combine the wet ingredients and finish the batter: In a medium bowl, whisk together the sour cream, milk, eggs, and vanilla until combined. Add the mixture to the dry ingredients. Beat the batter on medium speed until you get a smooth batter. A few small lumps are totally fine. 
  6. Prepare the cake: Spread half of the batter into the prepared pan. Sprinkle the cinnamon-sugar layer over the top of the batter in an even layer.Spread the remaining batter over the top (this does require some patience since the batter likes to lift off the cinnamon-sugarlayer). Top with the crumble mixture. 
  7. Bake the cake: Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 1 hour (or until the cake comes to room temperature) before serving.
  8. Store the cake: You can make this cake a day or two in advance. Remove the cake from the pan and cover with plastic wrap. Keep it on the counter at room temperature. To freeze the cake, wrap it in plastic, followed by foil.

A small first-aid kit Bandages, antiseptic wipes, pain reliever, allergy medicine, and any must-have family basics. Phone charger or power bank Especially helpful for road trips, long days out, or those “I swear my phone was at 42% five minutes ago” moments. Wet wipes + tissues For sticky hands, spilled drinks, mystery car messes, and every parent/grandparent/aunt/uncle who has learned the hard way. A lightweight towel or blanket Great for parks, wet seats, surprise splash pads, outdoor concerts, or impromptu picnics. A few snacks Granola bars, crackers, trail mix, fruit snacks — anything that can survive a little heat and prevent a hunger-related family incident. Plastic bags or a small trash bag For wet swimsuits, muddy shoes, snack wrappers, or anything you don’t want touching the rest of your car. Spare sunglasses or a hat Simple, useful, and always appreciated when someone forgets theirs. Pet basics, if applicable A leash, collapsible water bowl, waste bags, and a small towel can make pet-friendly outings much easier. Where to keep it: Your car is usually the easiest spot, especially if you’re often on the go. If your vehicle gets too hot, keep heat-sensitive items like sunscreen, medicine, and snacks inside the house and toss them in before you leave. You can also make a smaller version for: Pool bags Lake bags Sports practices Road trips Grandkid days Dog park visits The real trick: Restock when you get home The Go Bag only works if it’s ready when you need it. After a busy weekend, take two minutes to replace what you used: snacks, wipes, sunscreen, bandages, water bottles, or plastic bags. That tiny reset makes the next outing so much easier. Summer should feel a little more spontaneous — and a little less like you’re packing for an expedition every time you leave the house. A simple Go Bag won’t solve everything, but it might just save the day.
